Since I can't eat mayonnaise I've been looking for a decent chicken salad recipe. Here's what I came up for dinner tonight:
1 can white chunk chicken
2 or 3 sun dried tomatoes
1/4 avocado, chunked
Bit of shallot (or onion)
1/4 cup chickpeas
Squeeze from 1/2 lemon
Drizzle of olive oil
Salt & pepper to taste
Mix well & enjoy! Tasty and healthy, the best combo ;)

Sweet Potato
Since I can't have butter and I find olive oil & sweet potato a little odd, I was looking for new things to add. What I found was simple & delicious.
Ingredients:
One medium-large sweet potato
Heaping teaspoon of coconut oil
Cinnamon
I microwaved the potato for 6 minutes on high, then removed the skin & mashed it up. I added the coconut oil while still hot so it would melt, then sprinkled with cinnamon. The coconut oil gave it a fabulous creamy texture & the cinnamon made for a sweet treat.

Purple Smoothie
I was craving something sweet this morning instead of my usual crazy-green smoothie. Here's what I came up with:
1 cup frozen blueberries
1 cup frozen cherries
1 cup unsweetened vanilla almond milk
1/2 tbs cinnamon
Splash almond extract
Splash of water
Tbs chia seeds (of course)
Tbs flax seeds (of course)
Tastes delicious but is a very thin; if I were to make it again I'd add some avocado for a more creamy texture. Definitely settled my sweet tooth though :)
